Pu Erh tea from Yunnan has been famous since the 3rd and 4th centuries, when poet Liu Kun mentioned medicinal tea in Jiangsu province, China. Pu Erh is often sold in large tea disks like the one shown above or it can be loose tea. Pu Erh was carried by porters, mules, horses and yaks from Yunnan to Tibet a journey of many months during which time the tea fermented increasing its healing digestive effects. Pu Erh can be “green” or “cooked.” The “green” (shou) Pu Erh continues to age and improve in taste and healing capacity over time. Andrographis (Andrographis paniculata) is the king of bitters.
